10 Minute Dark Chocolate Marzipan Candy (Vegan and Gluten Free)

I love marzipan candy from See's and it has been on my list to try my hand at making it for a while now.  But we don't eat corn syrup, which is generally one of the ingredients.

I recently bought some brown rice syrup to make another recipe and thought it might be a good substitute, and it is!

So today I made myself a little treat, some 10 Minute Dark Chocolate Marzipan Candies.  They are quite good and if you like marzipan they hit the spot.

I ended up using some almond meal in mine, because it is what I had on hand, but to make a more traditional looking candy you woudl want to use almond flour or simply grind some blanched almonds in the food processor.

These are not exactly traditional and a bit softer than Marzipan I have had in the past.

10 Minute Dark Chocolate Marzipan Candy- Makes 1 dozen
  1. Combine in your food processor almond meal, brown rice syrup and almond extract.
  2. Process until it almost comes together
  3. Check it to make sure when you press it, it sticks together
  4. Prepare a sheet of wax paper and sprinkle with powered sugar 
  5. Scoop out the almond mixture onto the sugar covered wax paper
  6. Roll until coated with the powdered sugar
  7. Split the candy ball into 1/2, then 1/4's and then each 1/4 into 3 pieces.  You should have 12 pieces.
  8. Form each piece into a small rectangular log shape and place on wax paper.
  9. Spoon melted chocolate over each piece with a spoon and spread to cover.  (you may also try dipping each into the chocolate)
    Place each piece onto a tray or plate covered with wax paper.
  10. Freeze or refrigerated until firm.
  11. Enjoy.
  12. Store in a covered container in the fridge for up to a week, longer if in the freezer.
