DIY Thin Mints (can Be Gluten Free!)

I LOVE Thin Mints, but since our family is gluten free we don't have them any more. 

Since it is Girl Scout Cookie season there are lots of cookie recipes on Pinterest right now and I saw a few for homemade Thin Mints.

This got me thinking that I could make these gluten free!!  Yeah, what a treat!


These cookies are not from scratch (which I usually like), but they are quick, easy and may help you satisfy your Thin Mint urge long after those Girls Scout boxes are empty.

DIY Thin Mints (can Be Gluten Free!)

Ingredients
  • 10-12 Chocolate Sandwich cookies (I uses Glutino)
  • 1 cup chocolate chips
  • 1 tsp coconut oil or shortening (I prefer coconut oil)
  • 1/4 tsp mint extract (more if you want it more minty, but only add a drop at a time)

Instructions
  1. Separate Chocolate Sandwich cookies and remove filling
  2. Eat Filling.. oh sorry, that's just me, you can do what every you want with it.
  3. Melt Chocolate in a small microwave safe bowl in the microwave 
  4. Microwave for 1 minute
  5. Remove and stir
  6. Microwave again for 30 seconds, stir
  7. If not melted return for 15 seconds and stir
  8. Stir in coconut oil
  9. Dip Cookies into chocolate using a fork or toothpick
  10. place on a wax paper covered plate 
  11. When all are dipped move cookies to the freezer or refrigerator to harden
  12. Eat all the cookies before your kids get home  Enjoy
  13. Store in the refrigerator for a week or more (yeah right!)

  1. Saw this on Pinterest and I had to try it! But instead I used mint chocolate baking melts. They turned out great!

  2. Is peppermint extract the same thing as mint... might have bought the wrong thing *sigh*
