Raise your hand if you want cookie dough RIGHT NOW.  It's most of us, right?!!

Cookie dough is so good (and naughty..we know we should not eat it, right?).  What if I told you I am going to give you permission it eat some cookie dough and you can have it in around 5 minutes.

A Lazy Girl dream!!

These cookie dough truffles can be ready to eat in about 5 minutes (if you can find your measuring cup in your out of control utensil drawer).  AND they are 1/2 way healthy.  Score!!

Here we go..

5 Minute Cookie Dough Truffles

  • Prepare a plate or tray with parchment or wax paper
  • In a medium bowl add 1st 3 ingredients, stir to combine
  • Add in vanilla and coconut oil, stir to combine
  • Mixture may seem dry, but press together with your fingers and see if it holds together
  • If it does not hold together add in 1/2 tsp of water and mix.  Press together.  Add water until it presses together.
  • This can get too wet very fast.  If you accidentally add too much water add in a Tbs of almond meal or flour at a time until it is no longer too wet
  • Add chocolate chips and stir to combine
  • Take about 1/2 Tbs of dough and roll into a ball with your hands
  • Place on parchment or wax paper
  • East right away or store in the refrigerator (They will firm up more) for a few days (but you know they are not going to last the day).
  • Optional- you could roll these in coconut or chopped nuts, that would be yummy, too.
  • This recipe could be easily doubled or tripled
Makes about 9 Cookie Dough Truffles

now.. go make them, and tell me if you do.
